As much as I love creating my own dishes, sometimes you just need someone else to give you the idea and do the creative work. I love being creative in the kitchen, but with a full time job, keeping up with my work social media, constantly doing side projects, taking care of the house, 2 dogs, 1 foster dog, and a husband, sometimes I am just brain dead. Ya feel me? Shout out to those who have kids on top of all that.
When I feel uninspired by food I do a quick scan of Pinterest for ideas. Sometimes it jump starts my creativity to develop something of my own and sometimes I just make someone else’s recipe. Thank you to all the food bloggers out there creating delicious content so that I don’t always have to. Below are 3 recipes that I have recently created and really enjoyed.
#1 New Recipe I Love: Thai Style Chicken Noodle Soup from The Brooklyn Homemaker
A quick and delicious soup is always a favorite in my house. This recipe uses chicken thighs instead of chicken breasts, and now I vow to only use chicken thighs in my soups. So much more flavor. This recipe has a little spice, a little citrus, and big flavor. Yum.
#2 New Recipe I Love: Chicken Thighs with Creamy Mushroom Garlic Sauce from The Dirty Gyro
I have been on a serious chicken thigh kick because thighs have so much more flavor it’s unreal. When I found this recipe, I was really craving something creamy and rich. This is a perfect balance of providing those flavors without over doing it. Plus I love mushrooms a whole lot.
#3 New Recipe I Love: Blueberry Banana Baked Oatmeal from Live Well, Bake Often
I have been in a real breakfast funk, but I love making a baked oatmeal that we can eat all week. It’s a great time saver and a productive way to use overly ripe fruit. This recipe is a perfect basic recipe that you could really jazz up. I doubled the cinnamon, and when I make it again I am going to add walnuts for a little crunch.
