Thinking about what to create for dinner isn’t always easy - but sometimes a peek into the refrigerator helps get the creative juices flowing.I spotted the ingredients for a savory and flavorful stewed mushroom and onions recipe.

I am in the business of making food with what I have, with the cookware I have available. Although I could technically just create the same dinner meals in rotation, like how my mother did growing up. That wouldn’t be as fun.

Besides, I am not sure anyone reading this would want me to feature beans and rice every day. Or…::whispers:: would you?

Anyway, I don’t always buy mushrooms on every grocery trip, but when I do, I am overly excited to use them in a new dish. They are “meaty,” packed with flavor, and it’s an overall great replacement for meat. There are many types of mushrooms out there - varying in texture, taste, and share.

I was in the mood for one of my favorite Puerto Rican dishes growing up: bistec encebollado, which is a steak and onion dish. Everyone has their own version of making the dish, however, my mother used to make it with just onions, steaks, and spices.

Because I knew I was replacing the meat with mushrooms, I wanted to give this dish a bit more life. So, I opted for additional ingredients including tomato sauce, sazon, Puerto Rican sofrito, and black pepper. These additions are also seen in so bistec encebollado recipes.

Sides To Serve With Stewed Mushrooms and Onions

A stewed dish is not complete without a side dish. Because the stewed mushrooms and onions dish is flavorful, I suggest a more mild side.

However, there are no rules here. If you want to double up on flavor - go for it. Here are a few suggestions.

  • Sweet Fried Plantains (Maduros)
  • Salty Fried Plantains (Tostones)
  • Steamed Vegetables
  • Sauteed Mustard Greens
  • Puerto Rican Yellow Rice
  • Empanadas

Puerto Rican Seasonings & Flavors

This recipe has traditional Puerto Rican flavors including sazon and sofrito. Sazon is a popular Puerto Rican seasoning that can be found at many big-box grocery stores. If you can’t find them there, sazon seasoning is available online.

Additionally, sofrito is a cooking base with plant-based aromatics. It’s used in many Puerto Rican recipes including soups, stews, and rice. It can be made at home. It’s relatively easy.

Although it might look intimidating at first, all it requires is a blender a few plant-based ingredients. I suggest making homemade sofrito for this recipe, however, it can be found premade a the store. I warn - it doesn’t taste nearly the same.

Stewed Mushrooms And Onion

Ingredients

  • 2 tablespoons olive oil
  • 4 ounces shiitake mushroom
  • 2 tablespoons sofrito
  • ½ yellow onion sliced into rings
  • 4 ounces tomato sauce
  • ½ cup water
  • Black pepper
  • ¼ teaspoon sazon

Instructions

  • Heat a non-stick pan over medium heat and add 2 tablespoons of oil. Once the oil is hot, add the mushrooms.

  • Stir occasionally and cook for 8-10 minutes, until golden and tender.

  • Add sofrito to the mushrooms and cook for 1 minute, until fragrant.

  • Add onions, tomato sauce, water, black pepper, and sazon. Stir to combine.

  • Once at a boil, reduce heat to simmer. Cover pan with a lid.

  • Cook for 20 minutes stirring occasionally. Increase temperature to medium and remove lid and cook for an additional 5 minutes.

  • Turn off heat and serve with a side of white rice.

Notes

  1. Feel free to add more or less sazon, according to what you like.
  2. I used shiitake mushrooms. If you use common mushrooms, they will shrink significantly. If you decide to use them, I recommend doubling the mushroom amount.
  3. Sazon can be found online at Amazon.com, or at most big-box grocery stores including Walmart and Safeway.
  4. Sofrito can be storebought, but its best fresh and homemade
