Ever since I went on a Wisconsin cheese tour last summer I’ve made it a point to try a larger variety of the many amazing cheeses that my home state offers. Recently I was at the grocery store and saw that Carr Valley Cheese Company produces something that they refer to as “Bread Cheese.”

Seeing this cheese really got me thinking. What if I were to make a grilled cheese sandwich that used this cheese in place of bread? A grilled cheese sandwich that was 100% cheese! I had no idea if it would even work, but right on the packaging Carr Valley actually recommendssautéing this cheese in a skillet. Plus, the cheese is already partially baked in an oven— hence the dark brown spots on it— so I figured it would be worth a shot.

I started off by heating up some oil in a pan and cutting the block of bread cheese in half. I added a few slices of Cheddarcheese to the middle of my sandwich andsautéd it for a couple minutes on each side. It turned out way better than I even expected. The bread cheese softened up a bit, but completely kept its shape, while the Cheddar melted perfectly in the middle. Long story short, the sandwich was delicious!

Seriously, if I didn’t have a heart attack after eating this 100% cheese grilled cheese sandwich I’m just going to have to assume that I’m invincible. I still made an extra trip to the gym the next day though just in case….

    One could do the same thing with a couple slices of halloumi as the “bread” and whatever melty cheese as the center.

    Halloumi grills nicely but doesn’t soften so the melted cheese would tend to squirt right out as you bite so that might be problematic though.

    In the early 80s I had a girlfriend whose 12yo kid loved “grilled cheese.” Grilled Cheese defined as two slices of Wonder Bread with American cheese heated in the microwave. Bleech…

    It’s also good if you slice it, fry it in a bit of butter, and dip it in syrup. There’s another company that makes bread cheese with jalapeños. You can buy it at Clock Shadow Creamery in Milwaukee (along with fresh curds).

    Dietary fat has very little or no effect on blood cholesterol. Eating this won’t give you a heart attack, in fact it’s probably better for you than using bread.

      Make sure you have some beans handy afterwards. They’ll clean you out. Chili, Black Bean Soup, Lentil Soup, whatever. Just make sure it has lots of beans and fiber. You will need it.

    Cheese-zilla!!! I would use english chedder with caramelized onions (at Trader Joe’s) instead of American (I’m addicted) tho…but the rest is perfect!

    So I had a similar sandwich recently made from fresh tasty cheese from Kenilworth Cheeses (Queensland Australia). Cut two slabs of cheese, place fresh raw butter and fresh raw sauerkraut in between. Divine……..
    You don’t need to eat for 24 hours after one of these 🙂

    They have the exact equivalent of bread cheese in Finland: Leipäjuusto
    They eat with jam on top of it, but I guess nothing could prevent us from adding more cheese

    Please tell me: What grocery store did you find this at? I went to the Carr Valley Cheese website and the cheapest shipping option is $15.29! No way…

      I believe it was Pick ‘n Save, but I don’t remember because I always go to all different grocery stores. Otherwise I know that some Whole Foods locations and some Sam’s Club stores have it as well. Woodman’s has a pretty gigantic cheese selection so I’d guess that they might sell it too.

    I resawed the brick in half so it makes 2 sandwiches. If you don’t have access to a food grade bandsaw, a tomato knife works well too. Per my kids request, I used cheddar and provolone for the melty cheese. When eating this, you must watch http://www.youtube.com/watch?v=J1jdSZzKzF4

    Juusto!! LOVE this stuff! I was raised in northern MN, surrounded by Scandinavians, and “squeaky cheese” was (and still is) abundant.

    I’ve had it the traditional way – warmed in the oven until soft on the inside, and served with jam or syrup – but never thought to turn it into a FREAKIN’ GRILLED CHEESE SANDWICH.
