What is “Carbonara Toast”?

Carbonara toast has been the hottest food in Korea and Japan. It’s very simple idea. Put carbonara flavor on top of toast instead of noodles.

When I heard about this toast, I was like, “What?! I’ve got to try it!” I love carbonara, it’s creamy, cheesy and savory from pancetta, what to not love about?! You put that flavor on top of the toast? How incredibly creative is that?

So this is the flavor file:

  • Honey butter
  • Mayonnaise (Must in tube, explain later!)
  • Perfectly cooked egg with runny yolk
  • Lots of black pepper
  • Salty and meaty pancetta (or bacon or prosciutto)
  • Umami parmigiano

Honey butter is optional to your taste, you can just use regular unsalted butter. But I think it really balances whole entire toast.

You could either cook or not cook the pancetta (or bacon or prosciutto). It’s really up to you. As you can see, I precooked pancetta and the edges are darken pretty well. So if you don’t prefer that, it’s your call!

Carbonara toast is a fun idea for brunch or your little one’s (of course yourself too!) snack!

Shall we begin?

Using mayonnaise in a tube, draw walls around the edge of the bread. You don’t have to use Asian brand mayonnaise, though, that ‘s perfect for this recipe. We’re creating walls so we can safely place egg in the top middle of the breads.

Crack 1 egg at a time on the top of the bread, mayonnaise will help the egg to not escape.

Season the egg with pinch of salt and pepper.

Now, place pancetta bits evenly on top of everything – the egg, mayonnaise and all. I precooked pancetta but to be honest with you, it’s unnecessary.

Sprinkle little bit of parmigiano, not too much. Other wise you will end up cheese cracker on top of the toast – which is not too bad if you prefer that, but I’d like to sprinkle more cheese after they come out from broiler.

Pop the toasts in a cold oven/broiler on the middle rack. Close then turn on the high broiler (550°F) and cook for 4 to 5 minutes.

When the cooking time is up, turn off the broiler and let it finish cooking with the rest of the heat, about 2 to 3 minutes.

Remove from the broiler and now, sprinkle as much cheese as you want! Serve immediately while it’s hot!
